Ginger and Apple
My Mother in law informed me she would love to try a ginger based cake
which was not
too sweet. After a trial run I came up with this cupcake which is moist
and shows a slight tartness from the tiny apple chunks which were slowly
cooked lightly with the stem ginger and added to a special recipe of
mine. The verdict was a lovely moist sponge with a slight bitter sweet
flavour from the apple and stem ginger. Finished with a swirl of stem
ginger frosting and a few strands of stem ginger.
