Espresso Coffee Cupcake

I really wanted to try something different for this cupcake.
I love to drink a really good quality espresso and thought why would I want to use instant coffee or as so many people do coffee essence in my cupcakes when I only use the finest ingredients that is why I have decided to once again do my own modern twist on a basic coffee cake and use espresso the verdict was a very light delicate flavour oozing with the taste of espresso and finished with a light fluffy creamy espresso frosting.

Stem Ginger and Apple

My Mother in law informed me she would love to try a ginger based cake which was not
too sweet. After a trial run I came up with this cupcake which is moist and shows a slight tartness from the tiny apple chunks which were slowly cooked lightly with the stem ginger and added to a special recipe of mine. The verdict was a lovely moist sponge with a slight bitter sweet flavour from the apple and stem ginger. Finished with a swirl of stem ginger frosting and a few strands of stem ginger.
